When you get a recipie that you like, don't like, used, never used or whatever, sometimes you need to substitute things in the list of ingrediants because of alergies, lack of materials and such.
Eggs - You can use most any fatty vegitable to replace an egg in a recipie, except omlettes. 1/2 a banana(frozen and then thawed works best), 1/4 cup of applesauce(unswetened) or even 1/4 cup of avacado will work in most baked goods. If you have egg whites but not whole eggs(it happens), use 1/4 cup of whites for every egg listed in the recipie.
Applesauce can also be used to replace all or most of the fat in most baked goods at almost a one to one ratio. Add just a little more of the applesauce to even it out, and you may need to bring down the added liquid content.
If a liquid sugar, such as honey, is listed, you can substitute any other liquid sweetener such as corn syrup, molases or simple syrup. Be aware that the properties of each are different, but as long as you are not doing something such as caramel, it should work. Actually, you can do caramel with many of them, also.
Herbs - If you have dried herbs but need fresh, you can try soaking the dried in water or a matching alcohol to what you are making. 1 Tablespoon of fresh is about 1.5 teaspoons of dried. If it is old, add more at the beginning of cooking as well as at the end.
